Changing the beginning

Today started off…. ummmmmm… sucktastically.  Lots of frustration.. a few emotional outburst later… it’s time to change my day.

I took a little walk, and decided it would be a great time for a knock out breakfast!!! You know… start the day over, and better!

I made Wildberry Scones the other day.  They are really light and airy… not dense… so they are not quiet scones but REALLY good! 1 package wild berry yogurt mix, 1 teaspoon baking powder, 1/2 teaspoon cinnamon blend till combined. Add 1 teaspoon Walden Farms blueberry spread, 1 teaspoon Walden Farms marshmallow dip, 1 teaspoon olive oil, and a bit of lemon juice… blend and bake at 350 for 13 minutes. I tripled the recipe and used a muffin top pan! 2 per serving + 1 teaspoon olive oil.

I heated up some strawberry rhubarb compote  (a la Janeva!)

If you have been in IP any length of time you have heard of Janeva and her miracle cookbook.  You also have heard af strawberry-rhubarb compote.

In the 3 years, since I learned about IP, I have learned that I need to be willing to try new things… but rhubarb took me a while to try.  I have had it before, when I was a child.  Like most picky chubby kids.. I only liked sweets, and rhubarb didn’t fit that bill!

About a month ago my neighbor offered me some rhubarb.  I have heard the rave reviews so I opted to give it a try.  However I did not have strawberry Walden Farms Syrup.  I did have blueberry… WOW!!!!

This morning I was making my normal coffee, with chocolate drink mix.  Normally I add spinach… forgot to buy it yesterday.  What the heck, I will add a little of my rhubarb compote.  Again WOW!!!! This tastes like an extremely decadent dessert!  I just found a new favorite!!!!! (Still use blueberry instead of strawberry… because I like it!)

Home sweet home

After traveling for a week, & having very limited options for food, I am so glad to be home!!!!

Started my morning with my chocolate drink mix/coffee/cinnamon/ginger/spinach cup of happy!  Pooch and I went for a 4 mile walk… and I made myself veggies and eggs for breakfast!

Very proud of myself for how well I managed the last week!!! Had I given in at any point today would probably suck.  Instead I feel great!!! Which is great because I have a lot of work to do… and I need to bring my A game!!!

Zucchini Fritters

I woke up early and decided to organize my food packs… I had a mushroom soup mix… but no mushrooms in the house to make Laura’s stuffed mushrooms…


I changed direction and started playing with cooking options for this mushroom soup.  I loved how easy The Cauliflower Tots where… but I didn’t have Cauliflower since I used it up yesterday.  What I did have was zucchini noodles…

I blended the mushroom soup mix with an egg and 1/4 cup egg whites. I added 1/2 teaspoon of itallian seasoning and a pinch of salt… combined with the zoodles (which had been blotted with a paper towel… and I had 14 ounces by weight.). Scooped them into haystacks on a cookie sheet with my silpat mat.  Sprinkled with a little bit of crushed southwest cheese curls left over from the pizza party.  (Honestly if I had a bag, I would have crushed the whole bag… some mixed in and some in top.) baked at 400 for 20 minutes.  Tastey little fritters!!!!

If you use two packages it makes two servings of IP, & 1 cup zucchini.

Coffee House Iced Latte


If you’re on the go and want to stop at a Starbuck’s or other coffee shop, ask for a doppio (2 shots espresso) in a Venti (large) cup with ice. Add 1 IP premade shake (vanilla, chocolate or cappuccino). Stir and drink up.

Latte = 1 unrestricted

Almond Joy Hot Chocolate


Recipe by Janeva Eickhoff

Tastes like an Almond Joy candy bar!
1 IP Chocolate Drink mix
8 oz. water
1/8 tsp. coconut extract (or to taste)
1/8 tsp. almond extract (or to taste)
Walden Farms Marshmallow dip, optional

1. Place ingredients in a bullet or ninja and blend.
2. Pour into a mug and heat in the microwave until hot.
3. Stir in a dollop of Walden Farms Marshmallow Dip for richness, optional.

Servings = 1 unrestricted
