Sharing

At my home, this is a weekend typically filled with celebrations and fun with family and friends.  Typically, this means food.

Jar because I am being more careful with my food choices doesn’t mean I need to bring “diet” food!  A few of my favorites… Janeva’s buffalo chicken meatballs.  Brought those to a potluck.. 150 meatballs were devoured in short order!

Today, I made myself a sandwich (Janeva’s potato buns) and some coleslaw.  For the coleslaw, I used angel hair cabbage, purple cabbage, and Broccoli… mixed with Walden Farms Ranch, Apple cider vinegar, Italian seasoning, and a dash of lime… to mine I added tomatoes and orange pepper because I wanted a little color.

just because we are on IP, doesn’t mean we can’t celebrate.  We are just making healthier choices.  Life did not stop for me to loose weight!!! I just am focusing on the fun a bit more. (Yes, the pictures are of food… but I am out playing!!!)

Ideal Protein Popsicles

(Mango Sunrise above)

The summer heat is finally here! With temps running into the 30’s, these 2 min popsicle recipes are a must have in the freezer and truly indispensable during the season.

Servings: Each recipe yields 2 servings; depending on the size of your mold you may get 2-6 popsicles.

Ingredients: 

Dreamsicle Popsicles 

5 oz cold water 

1 packet IP Vanilla Pudding mix 

1 Tbsp IP Orange Drink mix 

Popsicle mold
Chocolate-Orange Popsicles 

1 packet IP Milk Chocolate Pudding mix 

1 packet IP Orange Drink mix 

10 oz cold water 

Popsicle mold
Wildberry Yogurt Popsicles 

5 oz cold water 

1 packet IP Wildberry Yogurt Drink mix 

Popsicle mold
Peach Mango Popsicles 

10 oz cold water 

1 packet IP Peach and Mango drink mix 

1 packet vanilla pudding mix 

Popsicle mold
Mango Sunrise 

10 oz cold water 

1 packet IP Peach and Mango drink mix 

1 packet IP Raspberry Gelatin 

Popsicle mold

Instructions: 

Add all ingredients to shaker cup. Shake, pour into Popsicle mold and freeze until solid.

Rhubarb…

If you have been in IP any length of time you have heard of Janeva and her miracle cookbook.  You also have heard af strawberry-rhubarb compote.

In the 3 years, since I learned about IP, I have learned that I need to be willing to try new things… but rhubarb took me a while to try.  I have had it before, when I was a child.  Like most picky chubby kids.. I only liked sweets, and rhubarb didn’t fit that bill!

About a month ago my neighbor offered me some rhubarb.  I have heard the rave reviews so I opted to give it a try.  However I did not have strawberry Walden Farms Syrup.  I did have blueberry… WOW!!!!

This morning I was making my normal coffee, with chocolate drink mix.  Normally I add spinach… forgot to buy it yesterday.  What the heck, I will add a little of my rhubarb compote.  Again WOW!!!! This tastes like an extremely decadent dessert!  I just found a new favorite!!!!! (Still use blueberry instead of strawberry… because I like it!)

Light and Fresh

This was sooo good.  I made Janeva’s pizza crust on page 81.  I sliced up a zucchini and some tomato… took the cold veggies and mixed with Walden Farm Ranch… placed on top of my crispy crust…

This combination was light, fresh, zesty… and hit the spot!!! Easy peasy! The dog was not happy I didn’t share!

Sweet nibblets!

Seriously… rhubarb… my best friend!  If you haven’t tried it, look up Janeva’s recipe for strawberry rhubarb.  Page 45!  I didn’t have the strawberry sauce but I had blueberry Walden Farms Syrup!

I made vanilla ice cream with premade vanilla, Walden Farms Marshmallow dip and ice…

combine the soft serve ice cream and rhubarb… all I can say is WOW!!!!

Working for the weekend

Today I am taking advantage of time.  It’s a gift I don’t often appreciate.  I have a fantastic boss, and she made me promise to work on my work life balance.  So, I worked hard all day and was done in a reasonable amount of time… so I found a little extra time to start prepping so I could have even more time and fun over the weekend!!!

I made a lovely chicken and veggies, I baked IP bread and my IP brownie bites (Janeva’s Texas Muffins made in large batch, and switch out half the caramel mug cake for milk chocolate pudding.)  http://www.janevasidealrecipes.com/

The color of life

Lots of my family and friends tell me they hate veggies.  I get why my brother feels that way.  When we were growing up a salad was ice berg lettuce with ranch dressing… big blah bowl of colorless blech.

Today I pulled out my salad and someone stopped and said wow, that’s pretty.  I would eat that… and this person is not a healthy eater (used to be my junk food buddy!  She has found someone else to eat with!)

Today’s salad had angel hair cabbage, red and green leaf lettuce, orange bell pepper, purple cabbage, cucumber, and tomato.  A little Walden Farm ranch and some apple cider vinegar.  Viola!

Your food does not need to be boring!  Make it pretty!!!! It helps!
