At my home, this is a weekend typically filled with celebrations and fun with family and friends.  Typically, this means food.

Jar because I am being more careful with my food choices doesn’t mean I need to bring “diet” food!  A few of my favorites… Janeva’s buffalo chicken meatballs.  Brought those to a potluck.. 150 meatballs were devoured in short order!

Today, I made myself a sandwich (Janeva’s potato buns) and some coleslaw.  For the coleslaw, I used angel hair cabbage, purple cabbage, and Broccoli… mixed with Walden Farms Ranch, Apple cider vinegar, Italian seasoning, and a dash of lime… to mine I added tomatoes and orange pepper because I wanted a little color.

just because we are on IP, doesn’t mean we can’t celebrate.  We are just making healthier choices.  Life did not stop for me to loose weight!!! I just am focusing on the fun a bit more. (Yes, the pictures are of food… but I am out playing!!!)

Changing the beginning

Today started off…. ummmmmm… sucktastically.  Lots of frustration.. a few emotional outburst later… it’s time to change my day.

I took a little walk, and decided it would be a great time for a knock out breakfast!!! You know… start the day over, and better!

I made Wildberry Scones the other day.  They are really light and airy… not dense… so they are not quiet scones but REALLY good! 1 package wild berry yogurt mix, 1 teaspoon baking powder, 1/2 teaspoon cinnamon blend till combined. Add 1 teaspoon Walden Farms blueberry spread, 1 teaspoon Walden Farms marshmallow dip, 1 teaspoon olive oil, and a bit of lemon juice… blend and bake at 350 for 13 minutes. I tripled the recipe and used a muffin top pan! 2 per serving + 1 teaspoon olive oil.

I heated up some strawberry rhubarb compote  (a la Janeva!)

Sitting down to enjoy my breakfast and change how my day begins!

 

Zucchini Chips-my new obsession

These are so tasty and incredibly simple to make
INGREDIENTS
  • large zucchinis
  • Olive oil spray
  • Kosher salt/pepper/garlic powder etc
INSTRUCTIONS
  1. Preheat oven to 225 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. Slice your zucchini into super thin slices with a knife or mandolin.
  3. After you slice your zucchini, place the slices on a sheet of paper towels and take another paper towel to draw out excess moisture.
  4. Arrange zucchini on the baking sheet and spray with cooking spray.
  5. Season very lightly since they will shrink and have strong flavors.
  6. Bake for 2+ hours until they start to brown and aren’t soggy and are crisp.18951110_10102956619467748_1203178232160430783_n.jpg

Rhubarb…

If you have been in IP any length of time you have heard of Janeva and her miracle cookbook.  You also have heard af strawberry-rhubarb compote.

In the 3 years, since I learned about IP, I have learned that I need to be willing to try new things… but rhubarb took me a while to try.  I have had it before, when I was a child.  Like most picky chubby kids.. I only liked sweets, and rhubarb didn’t fit that bill!

About a month ago my neighbor offered me some rhubarb.  I have heard the rave reviews so I opted to give it a try.  However I did not have strawberry Walden Farms Syrup.  I did have blueberry… WOW!!!!

This morning I was making my normal coffee, with chocolate drink mix.  Normally I add spinach… forgot to buy it yesterday.  What the heck, I will add a little of my rhubarb compote.  Again WOW!!!! This tastes like an extremely decadent dessert!  I just found a new favorite!!!!! (Still use blueberry instead of strawberry… because I like it!)

Operation: make it easier has begun!

Pulling it together

After a really challenging week, I am making a date today to clean out all the crap. We have had company (including a bored teen), medical stuff, long hours, short fuses.

My house needs to be put in order. I am starting with my refrigerator. I know I need to go to the store to have good, healthy options… but first I need to figure out what I have. And I really need to chuck out the triggers…

Before and after pictures. Keeping in mind I don’t live alone (my Mom  shares a house with us and is not on program… at all) and I can’t throw it all out. I made a huge dent and all triggers are out of my site now!  (Mostly in the trash!!!)

Looks like I need veggies, lean protein, and to make some limes to squeeze on salads.

Light and Fresh

This was sooo good.  I made Janeva’s pizza crust on page 81.  I sliced up a zucchini and some tomato… took the cold veggies and mixed with Walden Farm Ranch… placed on top of my crispy crust…

This combination was light, fresh, zesty… and hit the spot!!! Easy peasy! The dog was not happy I didn’t share!

Sweet nibblets!

Seriously… rhubarb… my best friend!  If you haven’t tried it, look up Janeva’s recipe for strawberry rhubarb.  Page 45!  I didn’t have the strawberry sauce but I had blueberry Walden Farms Syrup!

I made vanilla ice cream with premade vanilla, Walden Farms Marshmallow dip and ice…

combine the soft serve ice cream and rhubarb… all I can say is WOW!!!!
